About Tellinas (beach clams)
Tellinas are small, smooth-shelled clams that live in the sand of Mediterranean beaches. In Valencia they are a favourite seafood tapa.
They are usually sautéed with olive oil, plenty of garlic and parsley and a squeeze of lemon, just until they open. Eat them straight away with bread to soak up the juices. Look for them at beach bars and seafood restaurants in El Cabanyal, Pinedo and El Perellonet.
